What happens if objects in the array have different keys?

All unique keys from all objects are used as columns. Objects that are missing a key get an empty cell in that column.

Can I convert the Markdown table back to JSON?

Not directly in this tool. Markdown tables are a display format and converting them back to JSON would require parsing the table structure. Use the original JSON source if you need to modify the data.
